Tomato Salad / Mild Tomato Salsa

I’m starting 2018 with a simple recipe that I make all the time but have never shared with you. It is a simple tomato salad / mild tomato salsa. Whenever we think of salsa, we automatically think of tortilla chips. Well, I think we can have salsa with any type of chips. Don’t mistake me, I like tortilla chips like everyone :P, but I have started experimenting with  different types of chips and so far I like quinoa chips the best. You can also have this salsa as a side for any meal.

Investing in our health is the best kind of investment. I have decided that I will make it a point to eat one raw meal a day every day this year. I want to balance my diet with more fresh vegetables and fruits. Carbs are very energy dense and even though they are filling, I feel that you have to watch your carbs as it is very easy to consume a lot more calories than you actually need and that leads to all kinds of health issues.

  • You may observe that the addition of salt releases a lot of liquid from the salsa.If you feel that it is very soggy. You can just collect it and use it in other recipes as a soup base or just instead of adding water.

We have always tried to take at least one yearly vacation that lasts more than a couple of days or a long weekend. This year, we decided to visit one of my dearest childhood friend in the UK. She lives with her husband in London. We came back this morning after a 6 hour delay on our last hop from Chicago. It was an amazing trip as we spent a lot of time on the road and traveled to Scotland and England. We spent the first half of our 10 day trip on the road and then relaxed at home and visited places in and around London. The Architecture, history of the buildings and the serene country side were the main reasons for our decision to visit the UK.

On our last day in London, my friend asked me if I can make her a recipe from my blog. The husband suggested his favorite cold tangy tamarind soup (known as pachi pulusu in Telugu) along with chicken fry and rice. This recipe is my mother-in-law’s and the husband introduced this to me. I have made this recipe many times for ourselves and for friends and a lot of people have liked it. It has been one of our comfort foods and I just realized that I have never shared the recipe on the blog 🙂 So I finally sat down and wrote a blog post for this spicy tangy and easy to make recipe.

Ingredients:

  • 3/4 cup Fresh Tamarind
  • 2 Hot Thai green chili
  • 1 Red onion (small)
  • 1/2 Tsp Red chili powder
  • 1 Tsp Salt
  • 1/2 cup Fresh Coriander leaves
  • Water as needed

Tempering

  • 1 Tablespoon Peanut oil
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Turmeric powder
  • A sprig of curry leaves

Coffee Vanilla Hot Chocolate

The last three months have been absolutely demanding and I have definitely been swept away by the strong winds. To do lists of things and still counting had me exhausted in more ways than I can describe in one blog post. I have realized that, things are never going to slow down until I remember to take a deep breathe and live in the moment. I am now catching up on a lot of things that needed my attention.

They say spending time with nature at least 15 min a day, can change ones mood for quite a bit in a good way. I do a lot of work in the front and backyard for the weekends usually, never have I noticed this beautiful tree right outside my window with green leaves and red fruits in clusters. Such a pretty thing to look at, it felt like a giant Christmas tree with red ornaments, right outside my window 🙂 There is so much beauty in our day today lives, and all we have to do is stop and smell the roses.

It was a Sunday morning. I told the husband, if he would like a hot cup of chocolate, he said sure why not. I had all the ingredients right in my pantry and fridge except the marshmallows. So we went and got some mini marshmallows. I was planning to make just the vanilla flavored hot chocolate, but was curious as to what if I add coffee to it. Will the two flavors compete or will something delicious come out of it ?  I made the hot chocolate and finished shooting. We moved to the couch with our warm mugs of hot chocolate. The next half an hour was pure cocoa bliss. Absolute silence interrupted by the ocassions. I was right, the final splash of vanilla seals the deal and makes every sip much more enjoyable.

Ingredients:

  • 4 cups Whole milk
  • 4 Tablespoon Coconut sugar
  • 3 Tablespoon Cocoa powder
  • 3 Tablespoon Milk powder
  • 1 Tablespoon Instant Coffee
  • ½ Tsp Vanilla extract
  • Marshmallows as needed

Coriander / Cilantro Mint Chutney
