Gongura Mutton – Sorrel Lamb Curry

The amazing diversity of Indian cuisine is an apt representation of the diversity of the country. Over the centuries, every region of India has developed its signature dishes. Whether it is the famous Hyderabadi biryani or the mumbai pav bhaji or bisibele bath from Karnataka, they have become the specialty of the place. Sorrel or roselle as it is known in english is a green leafy vegetable that is used in many dishes in my home state and has always been a symbol of our region. “Gongura” as it is known in Telugu, the language I have grown up speaking has won innumerable Telugu hearts. A chutney made with gongura is probably as “Telugu” as a dish can be.  It is a very versatile ingredient and is used for cooking with many ingredients including lentils and meat. There are two primary varieties of sorrel (red stemmed and green stemmed) with the red one being distinctively more sour flavored than the green variety.

He was so excited because it was one of his favorite dishes. I could see that he was nostalgic, not just for the flavors but good times spent with his friends when he was in India, where they used to catch up at restaurants over chilled beer and tasty food.  I wanted to share the recipe for “Gongura mutton” today. Though I have used goat (mutton) for my recipe, you can substitute this with any meat like lamb or chicken.

Ingredients :

Gongura paste

  • 1 Bunch / 300 gm /10 oz Sorrel leaves ( Gongura )
  • ½ cup Red onions
  • 1 Tablespoon Ginger garlic paste
  • 1 Tablespoon Peanut oil
  • 2 Green chili / Hot thai chili
  • 1 tsp Salt

Curry

  • ½ kg / 1.1 Lb Mutton
  • ½  cup Red onions
  • ½ cup Water
  • 1 Tablespoon Peanut oil
  • 1 Tablespoon Red chili powder
  • 1 Tablespoon Coriander powder
  • 1 tsp Turmeric powder
  • 1 tsp Pepper cumin powder
  • 1 tsp Garam masala
  • Salt for taste

Serving size 5 – 6

Ingredients

  • 1 Bunch Sorrel / Gongura leaves (300 gm / 10 oz)
  • 1/2 cup Red onions
  • 1 Tablespoon Ginger garlic paste
  • 1 Tablespoon Peanut oil
  • 2 Green chili / Hot Thai chili
  • ½ kg / 1.1 Lb Mutton
  • 1/2 cup Red onions
  • 1/2 cup Water
  • 1 Tablespoon Red chili powder
  • 1 Tablespoon Coriander powder
  • 1 tsp Turmeric powder
  • 1 tsp Red chili powder
  • 1 tsp Pepper cumin powder
  • 1 tsp Garam masala
  • Salt for taste
  • 1 Tablespoon Peanut oil

Instructions

  1. In a pressure cooker on medium to high heat, add oil.

  2. Add 1/2 cup red onions and cook until they turn translucent.

  3. Add the mutton and turmeric powder. Mix well and cook for 2-3 min.

  4. In a small pan add 1/2 tsp black peppercorns and 1/2 tsp cumin seeds.

  5. Roast for a minute and grind to a powder.

  6. Add red chili powder, coriander powder and pepper cumin powder.

  7. Add water and salt to the pressure cooker.

  8. Close the lid and cook on medium high heat for 5-6 whistles.

  9. Dice 1/2 cup of red onions and slit the green chili.

  10. In a sauce pan or deep pot heat oil.

  11. Add green chili.

  12. Add red onions.

  13. Add ginger garlic paste and cook on medium heat until the onions become translucent and the strong ginger garlic smell is gone.

  14. Add the sorrel leaves and the flower buds to the pan.

  15. Close the lid and cook for 5-7 min on medium low heat.

  16. Once the pressure come down with cooker. Open the lid and transfer it to the pan.

  17. Add salt and cook on medium heat for 5-7 min.

    Add garam masla.

  18. Meanwhile blend the sorrel leaves to a coarse paste.

  19. Add the paste to the pan. Mix well and cook for 5 min on medium low heat.

  20. Transfer it a serving dish and garnish with coriander leaves.

  21. If you prefer it tangy add lemon juice.

  • Add water and salt.

  • Dice 1/2 cup of red onions and slit the green chili.

  • In a sauce pan or deep pot heat 1 tablespoon oil.

  • Add garam masla.

  • Meanwhile blend the sorrel leaf mixture to a coarse paste.

  • Add the paste to the pan. Mix well and cook for 5 min on medium low heat.

  • Transfer it to a serving dish and garnish with coriander leaves and sliced red onions.

Notes:

  • Serve it with rice or roti.
  • You can store the left overs in an air tight container in the fridge for 1-2 days.
