Mango Shrikhand – Amrakhand – Mango Yogurt Pudding

If you were a kid growing up in India, chances are – you would have gorged on some of the best mangoes in the world. After living in the US for a few years, I can definitely say that I miss mangoes. I know it sounds funny, but trust me I do, and I am sure a lot of Indians in the US or anywhere else for that matter, would agree with me. I was in India, this time last year and spent every single day eating as many as I could. It was amazing.

Me and the husband were bored this weekend and decided to go to the grocery store to grab some veggies. While we were aimlessly wandering the fruit section, I smelled mangoes. Not the slightly sour but extremely good looking ones, which time and again end up disappointing me, but the sweet tasty and oh so good smelling mangoes, like the ones I had in India. The husband was skeptical. He did not think that we could find good mangoes here. But I decided to go with my instinct – well nose, to be honest and we got a pack of 6 mangoes. We got home and I was eager to taste them. I was a little skeptical myself, but I was pleasantly surprised to find that not only did they taste very good, they were almost as good as the ones I had back home. I ate two that day and over the next two days, polished off the remaining ones 🙂

Then I decided that this will be my 100th post. One of my favorite desserts from my childhood was “Shrikhand”. A delicious yogurt and mango based dessert, that is slightly infused with cardamom and garnished with pistachios and almonds. I wanted to do my own version of this dessert and the end result is this recipe. I hope you enjoy this simple but subtle delicacy.

I have been on a mango binge for one week now, having at least one mango every day and it is awesome to know that I can always drop by my neighborhood grocery store to get my next fix. Well at least until they don’t run out of mangoes 🙂

Here are the ingredients and the recipe details.

Ingredients:

  • 2 Mangoes (Alphonso / Totapuri )
  • 1 cup Yogurt / Curd (Plain, full fat)
  • ½ tsp Cardamom powder (4-6 Cardamoms)
  • 4 Tablespoon Coconut sugar or Regular sugar
  • 5-7 Pistachios
  • 5-7 Almonds
  • ¼ tsp Saffron (optional)
  • 1 Tablespoon Milk (optional)

Ingredients

  • 1 cup Yogurt / Curd (Plain, full fat)
  • 2 Mangoes (Alphonso / Totapuri)
  • ½ tsp Cardamom powder (4-6 Cardamoms)
  • 4 Tablespoon Sugar
  • ¼ tsp Saffron (optional)
  • 1 Tablespoon Milk (optional)
  • 5-7 Pistachios
  • 5-7 Almonds

Instructions

  1. Add the pulp of 1 mango to a blender and blend until smooth.

  2. Add the yogurt.

  3. Add the sugar.

  4. Blend for 10 seconds.

  5. In a mixing bowl dice and roughly mash the pulp of other mango.

  6. Add the mango yogurt mixture to the mixing bowl.

  7. Mix well.

  8. Add cardamom powder.

  9. Finely slice the almonds and pistachios.

  10. Add to the mixing bowl and mix well.

  11. Pour the shrikhand into serving bowls.

  12. Cover it and refrigerate for 3-4 hours.

  13. Garnish with almonds and pistachios.

  14. Serve with roti / puri or as a dessert.

  • Add the sugar and yogurt.

  • Blend for 10 seconds.
  • In a mixing bowl dice and roughly mash the pulp of other mango.

  • Add the mango yogurt mixture to it.

  • Grind the cardamom pods to a fine powder using a mortar and pestle.

  • Add cardamom powder to the mixing bowl.

  • Mix well and cover it with a foil or saran wrap and refrigerate for 3-4 hours.

  • Finely chop the almonds and pistachios.

  • Add to the bowl and mix well until combined.

  • Pour the shrikhand into serving bowls.

Notes:

  • I used coconut sugar for this recipe.
  • Infuse a pinch of saffron in a tablespoon of milk and add it to the mixture if you prefer.
