100% Whole Wheat Bread

As a child, one of my fondest memories was when I got a fever or a cold. It always meant skipping school and extra special care from mom. For the two days or two weeks that I was sick, I could pretty much get away with anything 😛 . I can still remember the one taste that almost everyone can associate with being sick – bread and milk. I never paid a lot of attention to the ingredients of bread until I started reading about healthy eating. I learnt about preservatives and additives that are present in most commercial bread and I learnt about refined flour and its effects.

I remember watching this show about baking where they showcased people obsessed with the process of making the perfect bread. The most amazing part was that they used only three ingredients – flour, water and yeast. It was fascinating to watch and it started me on my quest to make fresh bread. We always bought our bread from the  whole foods market. They have good bread , but after a few tries I realized that I can bake my own bread which is as good as the one we buy and it is much cheaper and takes way less time to make.

Here is my version of a tried and tested 100% Whole wheat recipe 🙂

Ingredients:

  • 3 cups Whole wheat flour (Atta)
  • 1 Tablespoon Coconut sugar / Cane sugar
  • 2 Tablespoon Ghee / Butter
  • 2 Tablespoon Yogurt / Curd
  • ½  cup Water
  • ½  cup Milk
  • 1 tablespoon Active dry yeast
  • 1 tsp Salt

A healthier version of chocolate brownies. Made in a microwave using almond flour, chocolate, butter, and coconut sugar and topped with vanilla ice cream. Served with homemade simple raspberry sauce..www.clovesandcaramel.com

100% Whole Wheat Bread

Ingredients

  • 3 cups Whole wheat flour / Atta
  • 1 Tablespoon Coconut sugar / Cane sugar
  • 2 Tablespoon Ghee / Butter
  • 2 Tablespoon Yogurt / Curd (Full fat)
  • 1/2 cup Water
  • 1/2 cup Milk (Full fat)
  • 1 Tablespoon Active dry yeast
  • 1 tsp Salt

Instructions

  1. To activate yeast, warm the milk in a small bowl and add 1/2 Tablespoon sugar and yeast. It would take 5-8 min to get activated.

  2. In a mixing bowl add wheat flour and ½ Tablespoon sugar. Mix well.

  3. Add ghee and yogurt to the flour mixture.

  4. Mixing everything together.

  5. Add the activated yeast mixture.

  6. Slowly add water and knead the dough to a smooth consistency.

  7. Cover the bowl with a kitchen towel and keep it in a warm place for 1 – 2 hours for the dough to rise.

  8. Add the salt and knead the dough again.

  9. Grease a bread loaf pan.

  10. Shape the dough into a log and place it in the bread pan.

  11. Cover the pan with a cloth and let it rest for 30-40 min for the dough to rise.

  12. Preheat the oven to 425 F or 218 C.

  13. Bake for 20 min. (Baking time varies with the type of oven used. )


  14. The surface of the bread would become hollow when tapped once the bread is done.

  15. Take it out of the oven and let it cool for 5-10 min.

  16. Cut it into slices as needed. Serve as a toast or make sandwiches.

Recipe Notes

  • I used coconut sugar for this recipe.
  • Do not add salt before the dough rises as it might interfere with the yeast.
  • I cut the bread into equal pieces and store in a cloth bag in the freezer and heat up when required. I did not see any change in the texture of the bread.

The bread is very soft and fluffy, I love to spread butter and drizzle honey for my breakfast.
