Almond baked donuts with beet frosting

Last weekend we happened to wind up at TJ Maxx after our  trip to home depot to get yet another tool – a leaf mulcher this time that the husband wanted to get because we have so many fallen leaves in the yard because of all the trees. We were joking that the neighbors might be thinking that we are either too busy or too lazy.

Anyways, while checking out all the nice stuff at TJ Maxx, I came across the section for halloween costumes for little kids . They had so many costumes – a panda, a police car, a pine apple and the cutest little donut costume that I ever saw. That is when the idea of making this healthy donut recipe struck me. I was thinking about all the ways I could make a donut healthy while keeping all the yumminess intact. I started with a baked donut rather than a fried one and then thought almond meal would make a good substitute for the otherwise unhealthy refined flour. I also wanted to use some healthy sugar alternative and this is the recipe I wound up with.

This is our first Halloween after we moved into our new home that we bought at the beginning of this year. We wanted to make it special. So we bought a pumpkin and carved it. Added a light inside and decorated our porch with these string lights that the husband had bought for one of his home automation projects which are “in progress” 😉  It was a dual celebration for both Diwali and Halloween this year as they fall within a couple of days of each other. We also bought some chocolates for giving out to the trick or treaters in the neighborhood. We had a queen elsa , a kitty cat and a pumpkin who dropped by today for treats 🙂

I was thinking about all the unhealthy sugar that we feed our kids these days when we can make healthy treats that taste just as good and are much healthier compared to the corn syrup fueled snacks and treats. I hope you enjoy the recipe for these fluffy delicious doughnuts.

Ingredients:

Dough:

  • 1 cup Almond flour
  • 1/2 Banana (ripe, mashed)
  • 2 Eggs
  • 2 tablespoons Honey
  • 1 tablespoon Coconut sugar
  • 1 tablespoon Coconut oil
  • 1 tsp Vanilla extract
  • 1 tsp Baking soda
  • 1 tsp Butter or Cooking spray
  • Pinch of sea salt

Frosting:

  • 4 tablespoons Yogurt / Curd
  • 1/2 Banana (ripe, mashed)
  • 2 tablespoons Beet root juice
  • 1 tablespoon Coconut sugar

Instructions:

  • Preheat the oven to 325°F or 165 C
  • In a bowl, add the almond flour, mashed banana, eggs and coconut oil and mix until well combined .

  • Add vanilla extract, baking soda, coconut sugar, honey, salt and mix well.

  • Coat a regular size doughnut pan with butter or cooking spray.

  • Spoon the batter into doughnut pan individually.

  • Bake for about 10-12 minutes. Check by inserted toothpick or knife and it should come out clean.

  • Set the donuts on a cooling rack.

  • For the frosting, blend yogurt, banana, beet juice and coconut sugar in a blender or a food processor.

  • Transfer it to a bowl and coat one side of the donuts with the frosting.

  • Top them with coconut flakes, sunflower seeds, pine nuts, goji berries, sugar coated fennel seeds or chocolate chips or any other kind of sprinkling that you prefer. 
  • Some of the topping suggestions that come to mind are raisins, toasted peanuts, pistachios, dried berries and cacao nibs.

Notes :

  • Do not over bake the donuts as they tend become dry.
  • I used full fat yogurt for this recipe, excluding the water because the frosting becomes runny and the donuts would become soggy.
  • Donuts are best eaten fresh.
