Indian spiced Barbecue Chicken

We decided to take a vacation this october to the smokies to see some amazing fall colors . My sister got married last month and this was our first family vacation with the parents, sister and brother-in-law. We drove to the cabin that we had booked few months ago 🙂 As luck would have it, it was raining the entire day on our first day of vacation weekend. We could not go out for the sightseeing that we planned, but ended up spending almost the entire day in the house. By evening, the sky cleared up a little and  we were able to get out and see beautiful scenic points. I had already marinated some chicken for barbecue and we had an awesome family dinner that night. It was a beautiful warm day the next day and we were able to enjoy the awesomeness that is the fall colors in the smokies 🙂 Here are few of the pictures.

13Now, here is the recipe for the two kinds of marinade that I used for the barbecue chicken. I decided to make one dry rub and one wet marinade to mix it up a little.

Ingredients :

Dry Rub

1.5 lb Chicken thighs

1 tbsp Salt

1 tbsp Coriander powder

3/4 tbsp Pepper

1/2 tbsp Garam masala

1/2 tbsp Turmeric powder

Serves 6

Prep time 8-10min

Passive time 2 Hrs

Cook time 10-12 min

N1Wet marinade

1.5 lb Chicken thighs

2 Green Chilli

1/2  Bunch Mint leaves

1 sprig Curry Leaves

1/4 cup Onion

4 tbsp Lime Juice

1 tbsp Ginger garlic paste

1 tbsp Salt

1/2 tsp Paprika

Serves 6

Prep time 8-10min

Passive time 2 Hrs

Cook time 10-12 min

N2Dry Rub

Personally I would choose chicken thighs over breast because they are more juicy and a bit high in fat. Wash the the chicken pieces ,add the dry rub ingredients and mix well so that all the pieces are coated nicely. Set it aside for 2 hours.

3Wet marinade

Wash chicken pieces , add all the remaining  mentioned wet ingredients to a blender to make a paste. In a bowl add the chicken thighs, the marinade and mix well . Set it aside for 2 hours.

2On a barbecue grill at 360 Degree F , cook the chicken for 5-8 min and then flip them and cook thoroughly on the other side for 2-3 min. The key with grilling chicken thighs is to keep it low and cooking it slow.

4And there you go , you have your yummy barbecue chicken ready to serve as it is or with sauce if you prefer.

Serve it hot. It tastes good as-is or with tacos.
