Pomegranate Spritzer

It feels so wonderful to be back in the kitchen after being so busy for the past month, attending my elder sister’s wedding and taking a vacation with my parents to florida. I did click a lot of pictures to share with you. Keep checking the blog !! This is my first recipe for the fall and today’s post is pomegranate spritzer. It is healthy, fizzy and delicious!

It’s as easy as combining soda water with pomegranate juice and a splash of mint or lime. That’s it ! It’s that simple 🙂

Ingredients :

2 cup Pomegranate juice (about 2 pomegranates)

4 tbsp Agave nectar / Granulated Sugar

2 tsp fresh lemon juice

½ cup Strawberries

12 oz or 350 ml Club soda

If you prefer a boozy version of this, you can add a little (1 oz) vodka to the soda.

Instructions :

Cut the pomegranates and carefully remove the seeds. Place the seeds in a blender and pulse a few times to break the seeds.

→ Place a cheesecloth over a bowl, pour the pomegranate blend , squeeze and extract all the juice. If you don’t want to spend time juicing a pomegranate, just use store-bought pomegranate juice. It works just as well.

→ In a medium saucepan over medium heat, add pomegranate juice and sugar . Cook until the sugar has dissolved, stir occasionally. Reduce the heat to low setting and cook until the syrup has reduced to 1 ½ cup or so, it takes about 45 minutes, stirring occasionally.

→ Add Lemon juice.

→ Remove from heat and set it aside for 30 minutes. The syrup would become dark and thicken slightly as it cools down.Transfer to an airtight container.

→  Let the syrup completely cool down to room temperature before keeping in the fridge. This can be stored up to 6 months.

→ To a 12 oz of glass, add a 3 tbsps of the syrup add 1 cup of soda and mix well.

Add sliced strawberries , pomegranate seeds and ice if you prefer it cold.

Enjoy 🙂 !!
