Citrus Kale and Quinoa salad

    Quinoa (pronounced keen-wah) is one of the oldest cultivated food grains with evidence dating back to being a domesticated crop more than 5000 years ago.It is a cereal grain but with higher and more favorable nutrient composition than other regular cereals. It’s high in essential amino acids like lysine and nutrients with anti-inflammatory properties. Quinoa has a mild flavor and is generally cooked like rice or couscous, but is fluffy and slightly crunchy. It is a very versatile grain and can be incorporated in a wide variety of dishes.Today’s recipe is a refreshing salad with quinoa, a citrus fruit, kale and fresh summer vegetables. Eating quinoa is a great way for vegetarians to get protein and this has kale too. So, there is an extra boost of protein which is perfect for a lunch recipe.

Ingredients – Salad

½ cup Quinoa

1 cup Water

½ tsp Turmeric

2 oz  Radish

1/2 Navel Orange

1 oz Kale

2 oz Corn

¼ cup Beetroot

2 oz Chopped toasted pecans (optional)


Ingredients- Dressing

2 tbsp Champagne vinegar

1 tbsp Olive oil

1 tbsp Sesame seeds

1 tbsp Agave Nectar

¼ tsp Paprika

1/4 tsp Salt

Wash quinoa under running water. Heat a medium size pot. Add quinoa and roast for 2-3 min. Then add water and close the lid. Cook for about 5-10 min on medium to low heat. (If you prefer to add extra flavor, you can cook the quinoa with vegetable stock instead of water). Bring the mixture to a boil, add turmeric and pepper. Mix well and keep stirring occasionally to prevent the quinoa from sticking to the bottom of the pan. Cook until all the water is evaporated and quinoa is fluffy . Add some extra water if necessary.

While quinoa is cooking, wash all the vegetables and cut them according to your preference and a citrus fruit of your choice. I used navel orange for this recipe.

Prepare the dressing by mixing all the ingredients in a small bowl. Transfer the cooked quinoa, the vegetables and citrus fruit to a bowl and mix well. Drizzle with the salad dressing according to your preference.
