Mustard Micro Greens Salad

Spring is probably my favorite of the seasons. Everything looks fresh, vibrant and colorful. The weather is gorgeous most of the days, and everything looks pretty. I have always been very enthusiastic about colorful pretty things. So, for today’s recipe, I have a fresh healthy salad that is almost too pretty to eat 🙂

I love micro greens. I always pick up one or two varieties with my weekly groceries. They have so many health benefits. Multiple research studies conducted by the USDA have tried to identify the key nutrients available in micro greens. Out of the twenty five varieties tested, they have identified the common key nutrients that include ascorbic acid (vitamin C), tocopherols (vitamin E), phylloquinone (vitamin K) and beta-carotene (a vitamin A precursor) and other related carotenoids. They are widely used and preferred by professional chefs to enhance their dishes with their delicate texture and distinctive flavor.

Salad Ingredients:

1 Pint Mini Mustard greens

½ Medium sized orange

½ Medium size red beet

2 Cherry tomatoes

½ Avocado

Dressing :

2 tbsp Olive oil

1 tsp Sesame seeds

1/2 tsp Poppy seeds

1 tsp Balsamic vinegar

1 tsp Brown sugar

Step 1 : The dressing

In small bowl, mix the oil, vinegar, and sugar first and then add sesame and poppy seeds . You can leave this for a few minutes or prepare it before hand to let it marinate and be more tasty.

Step 2 : The Salad

Cut half an orange in concentric circles, Beet into thin slices , cherry tomatoes, and place them on a bed of Micro greens on a plate. Cut the avocado into long slices and place it on the side.

Drizzle the salad with the dressing as per your liking. Enjoy your salad !!

If you would like to reduce the caloric intake, you can exclude the avocado and the dressing, but both the calories from the avocado and the olive oil are good for your heart and can be good for your health over all.
