Today is the halfway mark for our 21 day detox journey. This calls for a mini celebration !! And what better way to celebrate than to treat ourselves to a healthy treat, that is easy to make and tastes like heaven. I present to you, one of my favorite recipes for cookies. These raw vegan cookies are made primarily of coconut, the natures most versatile fruit or nut depending on your philosophical bent. Coconut has so many uses, that it is difficult to list them all down in a single blog post. I think that is the reason, it plays such a big role in hinduism and its myriad rituals. It is considered to be the purest offering to the gods and the water within the coconut is treated as sacred gift from the gods.
The main ingredient that we use in this recipe is coconut, which is as close to a superfood as we can practically get .It has a unique combination of fatty acids that can have profound positive effects on health. This includes fat loss, improved brain function, glowing skin, healthy hair and the list goes on.
Note to self : I should write a blog post for coconut oil and its uses.
½ cup Shredded coconut
1 cup Coconut flour
6 tbsp Agave nectar
4 tbsp Coconut oil
1 tbsp Vanilla extract or 1 inch of a Vanilla bean

In a bowl mix the dry ingredients i.e., ½ cup shredded coconut and ½ cup coconut flour .
In a blender add ½ cup of coconut flour , agave nectar, coconut oil and vanilla, blend it smooth.
Now mix the wet ingredients to the dry ingredients. Make sure that the cookie dough does not become runny. Roll the dough into 1 inch balls and press between your palms to make cookies. Because of the non traditional ingredients, these cookies are delicate and a bit brittle.
This recipe would be sufficient for 10-15 cookies and each cookie has about 110 calories.
Step 4 :
Place the cookies on a tray with baking sheet. Leave the cookies in the freezer for about an hour.
A simple recipe and a healthier choice when it comes to satisfying the craving for cookies. You can also get creative and add anything that catches your fancy . I like my cookies with almonds.
Eat them straight up or dunk them in a glass of almond milk 🙂
