Spring time is here and we have a nice healthy salad full of greens and nuts with a spicy tangy mustard dressing that brings out the fresh flavors of the greens against the cool crunchy texture of fresh lettuce. It is very simple to make, and filling. It has all the nutrition that you need to keep your body going while not heavy on the calories. A perfect salad for a perfect spring Sunday brunch.
5 oz Spring mix – Usually consisting of baby spinach , red and green chard and baby arugula.
3 oz Romaine /cos lettuce
1 tbsp Dijon mustard
1 tbsp Agave nectar
¼ cup Apple cider vinegar
2 oz Almonds

Step 1 :
Cut lettuce into bite sized pieces and add to a bowl, along with the spring mix. Prepare the mustard dressing by adding the Dijon mustard, agave nectar and apple cider vinegar in a bowl.
Garnish the salad in the bowl with chopped almonds. You could also add some raisins if you like.
