Rainbow tacos

What can be better for a weekend brunch than healthy, raw, fresh and colorful veggies made into crunchy tacos with flavors that are crisp and distinct. Its taco time and for this new recipe, I have rainbow tacos.

These are raw, vegan and are so simple to make and so filling with just enough calories to keep you going and fill you up for the rest of the day. A very good detox meal that is as healthy to eat as it is beautiful to look at šŸ™‚

Ingredients :

7 Fresh Purple cabbage Leaves

Ā½ Pineapple (7 long slices)

1 Red Bell pepper (7 slices)

5-6 Cherry tomatoes

1 Ā Large Avocado

1 tsp of salt

1 Bunch Cilantro

5 tbsp Ā Lemon juice

  • Separate cabbage leaves to prepare the taco shells.Ā Cut the red bell Ā pepper and the pineapple into long slices about 2 Ā inches in length. Chop up the ripe tomato and cherry tomatoes, add 1/2 the lemonĀ juice, salt and half of the chopped cilantro and mix it.
  • Blend the avocado with a pinch of salt into a paste. Add a littleĀ lemonĀ juice to it to prevent it from changing color with exposure to air.

  • Prepare each taco by arranging all the ingredients.
  • Start with the pineapple, tomatoes, avocado paste, red pepper, add the remaining lemon juice on the top . Use theĀ remainingĀ cilantro for garnish in the center.
