Avocado Zucchini Pasta

It is spring time now. After the long cold winters, we can expect some wonderful warm spring days, fresh flowers and everything pretty and colorful. To add to the colors of nature, this recipe is for a colorful filling healthy pasta dish. And it is so easy, you will thank me for sharing this wonderful recipe. As with my other recipes, this is a twist on regular raw pasta like dishes with a spice component. Lets see the recipe for this healthy meal.

Ingredients :

3 ripe Mangoes

1 ripe Avocado

4 Zucchini noodles

2 Garlic cloves

½ Green chili

1/2 tsp Salt

The raw zucchini pasta used for this recipe can be made with a simple tool called the spiralizer. There are many that are available in the market over a wide price range, but I use this one and for this post i used this one.


The sauce for the pasta is a breeze compared to the amount of effort required to make the zucchini pasta. Just put all the ingredients : the mangoes, the avocados, the garlic, green chili and salt. If you feel that you want your sauce to be a bit runny, add very little water. Be careful with the water as runny sauce may not coat the zucchini properly and take the fun and taste out of the experience. Blend the ingredients until smooth and viola !!! you have an awesome pasta sauce. The heat of the chili cuts beautifully through the sour-sweet mango and the nutty avocado goodness. The interplay between the distinct yet subtle flavors is the most amazing part of this dish.

Add the sauce to the pasta and enjoy !! This recipe makes a serving that is quite big. As this is a raw dish, it has a lot of water from the zucchini and if you feel that you might not be able to finish it all in one sitting, you can store in the refrigerator for seconds. As the sauce marinates the pasta, this gets better with a few hours. As you might have observed, I am gradually moving towards more dishes than smoothies as I wanted you to slowly ease into the healthy detox diets and smoothies are a good gateway to the transition.
