Papaya Fruit Bowl with Homemade Coconut cream

Happy Easter everyone !!

I hope you will enjoy my recipe for today, a delicious fruit salad with ripe golden papaya as the base and topped with colorful pineapple, raspberries, blueberries, blackberries and strawberries. This recipe is inspired by a version that I first tasted on our anniversary trip to the Big Island in Hawaii. I love papaya. It is a rich source of Vitamin C, that is essential for good immunity. Papaya aids in digestion, controls your blood glucose levels (very beneficial for diabetics) and is delicious by itself or in combination with other fruits. Even the raw papaya forms a base for the wonderful and spicy tangy Thai green papaya salad. Note to self : I should post a recipe for that one sometime !!

  • 1 Papaya (Ripe, Medium size)
  • ¼ cup Blueberries
  • ¼ cup Raspberries
  • ¼ cup Strawberries
  • ¼ cup Blackberries
  • ¼ cup diced Pineapple

Coconut Cream

  • 2 oz Coconut milk
  • 1 oz Coconut water
  • 1 tsp Palm sugar

Cut the papaya in half, remove the seeds and scrape the inside of the fruit clean.

Letting the coconut milk sit in the refrigerator for a few hours will separate the water from the solids, we use the solid with some coconut water and add some palm sugar to sweeten it while blending to reach the consistency of heavy cream.

Using the papaya as a bowl, fill it up with berries as per your liking. You can actually substitute the berries with other kinds of cut fruit if you like, but I have found that berries complement the flavor of papaya very well. Drizzle the coconut cream as needed. Enjoy your delicious tropical breakfast.
